Ingredients

  • kielbasa sausage sliced
  • one sweet onion
  • three small bell peppers (I like the tri-color bag which includes a red bell pepper, orange bell pepper and a green one)
  • One zucchini sliced
  • A bag of small red potatoes sliced
  • Tablespoon of olive oil or avocado oil
  • Slap yo momma seasoning (season until your ancestors say to stop… which should be about 4 shakes).

Instructions

  1. Slice all of your vegetables and sausage
  2. Sprinkle oil on top
  3. season with slap yo momma seasoning
  4. combine
  5. Bake for 30 minutes of 375
  6. Onions should be transulent and veggies cooked all the way through. Eat as in or serve on a bed of rice

First you want to Slice all of your vegetables and sausage up. Remember the thinner they are sliced, the less amount of time they require to cook. 

 

Once all of your veggies and sausage is sliced. Sprinkle oil on top and add seasoning then stir everything so it’s all well coated.

NOTE: You can add whatever seasoning you like. For me, I like to keep it easy so I use slap ya mama seasoning but seriously, any seasoning of your choice will do! 

Now bake in the over for about 30 minutes, on 375 degrees. Onions should be translucent and veggies should be cooked all the way through. Eat as is or serve on a bed of rice!
