This is one my favorite chia seed recipes because its simple yet delicious. I like texture so I like to top my chia seed pudding with different fruits, nuts and granola (I use a gluten free granola since I have a GF sensitivity) but you can top it to your liking!
Combine all of the ingredients in a mason jar and shake until mixed. Seal and let sit in the fridge overnight (8 hours). If you don’t have a mason jar, get one. No, just kidding lol. You can totally just use a bowl with a lid.
Once the vanilla chia seed pudding is ready, I like to top with 2 tablespoons of vanilla Greek yogurt, chopped walnuts, gluten free granola, and 1/2 a banana.
Be prepared to lick the bowl clean. 😛
